Stephanie Richter Eubanks, 66, of East Palatka, passed away after an extended illness on Saturday, November 9, 2020. She was born in Cuba to the late Ruth Knox Richter and Richard F. Richter. The family settled in San Mateo, Florida, aka “God’s Country” when Steffie was five years old. She graduated from Palatka Senior High School with the awesome class of 1971. Stephanie worked 30 years for the Indian County State’s Attorney Office and served as administrative and judicial assistant for several judges. She was member of the San Mateo Presbyterian Church. Steffie loved animals, especially her three dogs. She was an avid reader, a Florida Gator fan, and a huge fan of the Wizard of Oz.
She was preceded in death by her beloved husband of 45 years, Thomas Mitchell Eubanks, and her parents, Ruth Knox Richter and Richard F Richter.
Steffie is survived by a son, Matthew Richter Eubanks (Hillary) of Clewiston, a brother Steve Richter (Julie) of East Palatka, brother-in-law Kenny Eubanks (Susan) of East Palatka, three grandchildren - Wyatt, Brandon and Tucker, numerous nieces and nephews and number of other loving relatives and close friends.
A funeral service celebrating Steffie’s life will be held at 2:00 PM on Thursday, December 3, 2020 at her home site at 148 Ranch Road in East Palatka, Florida with Dr. Robert Mills officiating.
In lieu of flowers, the family requests memorial donations be sent to the San Mateo Presbyterian Church, P.O. Box 57, San Mateo, FL 32187, or to S.A.F.E. Pet Rescue, P.O. Box 188, Hollister, FL 32147.
